To Assemble
Equipment:
- Cutting board
- Paring Knife
- Blender
- Steel Bowl
- Plastic storage container with lid
Ingredients:
- Almonds
- Purified/ Filtered Water
- Honey or other liquid sweetener of choice
- Vanilla essence
- Oats or your favourite dry Muesli mix
- Honey or other liquid sweetener of choice
- Cinnamon
- Salt
- Raisins
- Apricots, dried
- Cranberries, dried
- Hazelnuts, shell and skin off, toasted
- Almonds, sliced, toasted
- Goji Berries, soaked overnight in filtered water
- Granny Smith Apples, organic
- Strawberries, baby organic
- Garnish: edible flowers & mint leaves
To Prepare:
- Remove the almonds from the water and rinse under a little bit of filtered water. Place in the blender.
- Add the remaining filtered water and puree smooth.
- Season to taste with vanilla essence and sweetener of your choice.
- Strain through a fine sieve to yield approximately 400-500 ml of almond milk.
- Place in the fridge and reserve cold until ready to use.
- In a mixing bowl add the oats, almond milk, cinnamon powder and salt.
- Add the liquid sweetener and vanilla essence to desired sweetness and taste.
- Add the dried fruits and nuts.
- Stir well and transfer to plastic container with lid
- Place in the fridge overnight so the oats absorb the liquid.
- Adjust consistency with remaining almond milk if desired.
- Adjust sweetness by adding more liquid sweetener of your choice.
To assemble:
- Place the amount of Muesli in a serving bowl on top of an under liner plate with banana leaf.
- Cut the tops off of the strawberries and place in the middle of Muesli as in picture.
- Small dice the granny smith apples and place next to the strawberries as in picture.
- Sprinkle the soaked goji berries on top of the apples and strawberries.
- Sprinkle a little toasted almond on top as garnish.
- Garnish the dish with edible flower petals and mint leaves.
