Chunky Monkey Pancakes

  • Freshly grated dash
  • 250 ml
  • 1 ea.
  • 3 ml
  • 90 gms
  • 200 gms
  • In a mixing bowl combine all of the dry ingredients including the spices- mix well.
  • In another small bowl whisk together the milk, egg and vanilla extract.
  • Add the wet ingredients to the dry ingredients, mix well with a wire whisk until all lumps are gone.
  • Add the chocolate chips to the batter.

To cook the pancakes:

  • 20 gms
  • 20 gms per ring mould
  • 7 cm diameter
  • Note: These pancakes taste just as good cooked freeform. If you do not have ring moulds, no problem. Instead medium dice your bananas and mix into the batter. Cook the pancakes in clarified butter as you normally would do.
  • Place a 30 cm diameter non-stick sauté pan on stove over low-medium heat.
  • Place two ring moulds inside the pan.
  • Spoon approximately 10 grams of melted clarified butter inside each ring mould.
  • Add three slices of bananas inside of each ring mould as in picture below.

  • Pour the pancake batter on top of the bananas, covering evenly.

  • Continue to cook until bubbles appear as they do in the picture. Approximately 3-4 minutes.
  • Note: in the image, the pancake on the right has about 1 more minute of cooking before the next step.
  • Once the pancakes have cooked till 80% done, take a sharp paring knife and cut around the edge of the pancake.
  • Carefully flip the pancakes over in the ring mould. Continue to cook for about 1 minute longer.
  • With the paring knife again, cut the edge around the inside of the ring mould.
  • Remove the ring mould and continue to cook for one more minute.
  • Remove the pancakes from the pan and place on a paper towel.
  • Continue this process until all the batter is cooked.
  • Place one pancake (the ugliest one) in the centre of a plate.
  • Top with sliced bananas.
  • Place another pancake on top and repeat the stacking process.
  • Cut a finger banana in half and stack on top.
  • Drizzle with PURE Maple Syrup and dust with powdered sugar.
  • Garnish with fresh flowers or mint leaves.

Note: if you have extra pancakes left over, store them in the fridge. You can always heat them up in the oven and top with your favourite ice cream, chocolate and caramel sauce. And add whipped cream if you are feeling really naughty!
