    Three kinds of pumpkin

    Inspiration:

    My passion in Karma Bavaria is to get everything out of vegetables. In this sense, vegetables can be used as dessert. an example three things from the pumpkin; pumpkin, seeds and oil in combination with meringue and mint.
    My ideas are to inspire guests with simple refinements that you don’t actually try to cook at home

    Cooking Options:
    To make the pumpkin ice cream later, the best thing you need is an ice cream machine, but it can be done without and takes longer. using this old method of making, the ice mass in the freezer should be stirred with a whisk every hour to keep it freezing but smooth. As soon as the desired consistency is reached, it can be served.

    Meringue:

    • 200g
    • 100g
    • Pinch
    • Whip the sugar with the egg white and pinch of salt until it is stiff.
    • Then fill into a sprinkler and sprinkle on a baking sheet.
    • Then put in the oven at 90 degrees for 2 hours until the meringue is dry.
    • let cool and break into large pieces.

    Pumpkin seeds:

    • 100g
    • 250g
    • Caramelize both ingredients in the pan and then let them cool and thn roughly grind them
    • Pumpkin seed oil, just buy in the supermarket. The best oil comes from Austria.

    Pumpkin ice cream:

    • 500g
    • 500ml
    • 500ml
    • 200g
    • Pinch
    • 6
    • First wash the Hokkaido pumpkin, cut and remove the seeds.
    • In milk, cream salt and sugar simmer in the pot until the pumpkin is very soft.
    • Then mix the mass until it is very fine and then set with the egg yolk like a vanilla sauce.
    • Now cool the mass and put it in the ice cream machine and freeze!!.
    • Enjoy your meal.
