Humble cuts
Roasted bone marrow, parsley salad, grilled sourdough.
West coast oysters
Shallot, sherry vinegar.
Classic french
Beef fillet tartare, hen’s egg. Mustard, capers, cornichons
Foie gras au pruneaux
Pan-seared with prunes.
Chef’s larder
Roasted salmon, puy lentils, bisque.
Coffee and a cigarette
Smoked cream Panna cotta, coffee, bourbon caramel.
